(fill in the blank). It's what's for dinner.

The dishes are done. kinda. The laundry is done. halfway. Dahlia is asleep. for now. I am am finally blogging.

It's been a long time. And domestic issues are weighing on my mind. We try real hard to not live in a pigsty around here, but cleaning does take a back burner. The real problem I am having is what to cook for dinner. I know, I know. "Your husband is a chef!" The last thing that a chef wants to do is wrangle up an impromptu meal at 11 o'clock every night after cooking and cleaning for 12-13 hours every day.

So, I try to cook. TRY. It is so hard to cook at a hot stove with a 10 month old on your hip. After all day away from each other, Dahlia just doesn't want to be left in her playpen or in the highchair for long. I have 20 minutes, tops, to do it all.

    Oh wait! Sorry, I'm missing some of my Norman eateries. ;)

    Taco salad is one of my favorite fallbacks. Especially with packaged lettuce/salads out there, and shredded cheese. All you have to do is cut up tomatoes (if you're feeling that ambitious and virtuous).

    Vegetarian spaghetti--meaning we just don't put meat in the sauce--with packaged salad and a loaf of french bread from the freezer...I see a theme here.

    You can cook baked potatoes in tin foil in your crock pot during the day. Then all you have to deal with later are the toppings (shredded cheese, sour cream, you can even buy chives pre-chopped, although I'm too cheap to actually do that).

    I guess what I'm saying is to use some of the conveniently packaged foods from time to time. I shunned doing that for awhile, but sometimes they just make your life a million times easier.

    Also, sometimes it's easier to make lasagna or beanchiladas (tortillas, refried beans, cheese & enchilada sauce, nothing fancy), stuff like that, the night before, refrigerate, and throw in the oven right about the time your toddler gets really cranky late in the afternoon.

    Or on the weekends, we make multiple batches of waffles, and then we can throw them in the toaster at supper time. You can buy preformed sausage patties and cook them in the oven.

    I'm not a fabulous cook, but we don't go hungry anyway. :) Hang in there, it gets easier. Love from Georgia!

  2. Baked potatoes in the crock pot?! What a revelation! I am totally doing this. Thanks for all of the ideas. Lord knows I need all the help I can get. We miss you around here:)
